Nicky’s Recipe Notes

These turkey wraps make a fantastic light lunch or dinner. They’re quick to make – around 20 minutes from fridge to table – and they’re so tasty and filling.

I like them for lunch as a simple high-protein meal. They’re pretty light on the carbs, but if you want to add some carbs in, you can add rice to the filling too.

***Full recipe with detailed steps in the recipe card at the end of this post***

  1. Fry the turkey in a hot pan in oil until it browns.
  2. Add the garlic and chilli and stir-fry.
  3. Stir in the seasonings, sugar, and sauces and stir together until everything is combined.
  4. Divide the mixture between your lettuce leaves, add your toppings and serve.

Pro Tip

Baby gem or little Gem lettuce is best for these wraps. It’s a small version of Romaine lettuce. The leaves are small, but flavourful and crunchy, so they’re perfect for holding in the hand. If you can’t get hold of Baby Gem, then Bibb lettuce (also called butter lettuce) is a good swap. The leaves are softer, but still flavourful and small.

I love to serve this as a light dinner or a lunch!

Notes

Want to make these wraps more substantial?

If you want to make these wraps a little more substantial, you can add some rice. Either add a tablespoon of freshly boiled/steamed rice to each lettuce leaf, or alternatively, add 200g cooked rice to the pan with the cooked minced turkey and stir together before spooning into the lettuce leaves.

Can I make it ahead?

Yes, you can make the filling ahead, then cool quickly, cover and refrigerate for up to two days. Reheat in a pan with a splash of water until piping hot throughout. You can also freeze the mixture in an airtight container. When you want to reheat, leave it to defrost in the fridge overnight, then follow the same reheating instructions.
