Golden fried turkey mince with a lovely sweet-spicy-savoury flavour, stuffed into crisp lettuce leaves and topped with all the toppings! No knife and fork required!
Heat the oil in a frying pan (skillet) over a high heat.
2 tablespoons sesame oil
Add the minced turkey and fry for 5 minutes, breaking up any large pieces as you go, until lightly browned.
500 g (1.1lbs) minced (ground) turkey
Add the garlic and chilli and fry for another 2 minutes.
2 cloves garlic, 1 red chilli
Add the sugar, hoisin, soy sauce, white pepper and water stir together. Fry for a further 2 minutes, until the turkey minced is a golden brown. Turn off the heat.
2 tablespoons light brown sugar, 2 tablespoons hoisin sauce, 1 tablespoon dark soy sauce, ¼ teaspoon white pepper, 2 tablespoons water
Divide the turkey mince between the baby gem leaves.
12 baby gem lettuce leaves
Top with spring onions, sesame seeds, chilli flakes and finish with a drizzle of chilli sauce before serving.
6 spring onions, 2 teaspoons sesame seeds, ½ teaspoon chilli flakes, Sweet chilli sauce or sriracha to taste

Want to make these wraps more substantial?
If you want to make these wraps a little more substantial, you can add some rice. Either add a tablespoon of freshly boiled/steamed rice to each lettuce leaf, or alternatively, add 200g cooked rice to the pan with the cooked minced turkey and stir together before spooning into the lettuce leaves.Nutritional information is approximate, per lettuce wrap.
