Nicky’s recipe notes

Cajun spice is one of those shortcuts that adds loads of flavour.
The basic ingredients usually include black & white pepper, salt, Cayenne, paprika, onion & garlic powder. Some contain oregano, thyme, fennel, cumin and sugar too.
I see it as an ‘everything spice mix’ – if you want to add flavour and you like a bit of heat, it’s an easy option, without having to open all your other spice jars!

I use it to coat king prawns for this recipe, before frying them up with noodles and veggies.
You might also find it surprising that I add a little creme fraiche to the dish. Sounds unusual, but the slight creaminess balances the tangy spiciness perfectly. You can swap out with a little double (heavy) cream if you haven’t got creme fraiche in.

📋 Ingredients

Noodles – I use ready-cooked egg noodles to speed up the process for this recipe, but you can use dried noodles, just cook as per the packet instructions.

Prawns – I use raw king prawns, make sure you peel and devein before cooking. I usually buy them frozen, as they’re cheaper. Then defrost in a sieve over a bowl before using.

Oil – Use a neutral oil such as vegetable, sunflower, or avocado.

Chicken Stock – You can use a crumbled stock cube dissolved in hot water, or use Homemade Chicken Stock.

  1. First, coat the king prawns in the Cajun seasoning, then fry until pink and remove from the pan.
  2. Fry up the pepper and onions in oil, along with garlic, chilli, salt and pepper, then add the stock, Worcestershire sauce, and crème fraiche.
  3. Those ready-cooked noodles go in next and are stir fried until hot, before adding the prawns back in. It’s all finished off with the addition of some freshly chopped coriander and a sprinkling of chilli flakes.

Pro Tip


Swap out the crème fraîche for 3 tablespoons of full-fat coconut milk or double (heavy cream) if you prefer.

Cajun Prawn With Noodles Recipe

Ingredients

Cajun Prawns

  • 300 g (10.5oz) raw king prawns , peeled and deveined
  • 2 tablespoons Cajun spice mix
  • 1 tablespoon oil

Stir Fry

  • 1 tablespoon oil
  • 1 onion peeled and diced
  • 1 red bell pepper deseeded and diced
  • 1 red chilli sliced
  • 2 cloves garlic peeled and minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 180 ml (3/4 cup) chicken stock
  • 1 tablespoon Worcestershire sauce
  • 1 heaped tablespoon crème fraiche

Noodles

  • 400 g (14oz) cooked egg noodles

To serve

  • 2 tablespoons finely chopped fresh coriander cilantro
  • Chilli flakes

Instructions 

  • Place the king prawns in a bowl and sprinkle on the Cajun spice mix. Stir together and put to one side.
    300 g (10.5oz) raw king prawns, 2 tablespoons Cajun spice mix
  • Add one tablespoon of oil to a large frying pan (skillet) and heat over a high heat. Add the prawns and cook for 2-3 minutes, turning once, until the prawns are pink. Remove the prawns from the pan and place in a bowl.

  • Turn the heat of the pan down to medium and add another tablespoon of oil to the pan.

  • Add the onions, peppers, chilli, garlic, salt and pepper and fry for 4-5 minutes, stirring often, until the onion starts to soften.

  • Add in the stock, Worcestershire sauce and crème fraiche. Stir together and heat through until just starting to boil.
    180 ml (3/4 cup) chicken stock, 1 tablespoon Worcestershire sauce, 1 heaped tablespoon crème fraiche
  • Add the noodles and heat through for 4-5 minutes, stirring often, until the noodles are hot. Then add the cooked prawns back in and cook for a further 1 minute, stirring often.
    400 g (14oz) cooked egg noodles
  • Turn off the heat, stir through the chopped coriander and serve topped with chilli flakes.
