These easy rotisserie chicken recipes are perfect for turning ready-cooked chicken into a quick and delicious meal.

From creamy Chicken a la King and comforting soups to chicken fried rice, burritos, gyros and cheesy pasties, these are some of my favourite ways to use up cooked chicken.

They’re also great for using up leftover roast chicken, so whether you’ve picked up a rotisserie chicken from the supermarket or have leftovers from Sunday dinner, there are plenty of ideas here for putting it to good use.

I love having a few recipes up my sleeve that start with cooked chicken. It takes out a whole stage of making dinner and means you can get something really tasty on the table that little bit quicker.

You can use a shop-bought rotisserie chicken (or cooked chicken pieces from the shop), or use leftover roast chicken for any of these recipes.

A few tips for using cooked chicken:

  • Use a mixture of breast and thigh meat if you can. The darker meat is particularly juicy and the breast meat is usually a little more firm, so it’s nice to have a mix of the two.
  • Add cooked chicken later in the recipe where appropriate. As it’s already cooked, it generally only needs enough time to heat through. This helps to stop it drying out.
  • Don’t forget the carcass! If you’ve got the whole chicken, save the bones for making chicken stock.
  • Leftover roast chicken works too. You don’t need to buy a rotisserie chicken specifically for these recipes – they’re perfect for using up leftovers from a roast chicken dinner.

I often deliberately cook a larger chicken than we need for a roast dinner, just so I’ve got enough leftover chicken for another meal. It makes dinner the following day so much easier!
