Souvlaki is a traditional Greek fast-food snack, usually made with pork (I need to get to work on the pork version!).  I find it works equally well with chicken thighs or lamb.  It’s marinated for an hour or so in a lovely lemony, garlic, olive oil marinade, and the meat soaks up the flavours so well. 

What’s to love about chicken souvlaki?

  • It’s a flavour-packed dinner that’s easy to modify for even the pickiest of eaters – just change out the toppings! If you don’t like salad, go with fries. Not keen on tzatziki? Go with sweet chilli sauce or garlic mayo 😋
  • You can cook these on a griddle, in the air fryer,under the grill, or on the BBQ.
  • It’s a great dish to prepare ahead, and serve later, as once the prep is done, it only takes 10 minutes of cooking before you’re all sat around the table digging in.

  • Swap out the chicken thighs for chicken breast if you prefer. I prefer thighs for this, as they stay juicy, even with the high heat cooking. If you use breast pieces, it will likely take a couple of minutes less to cook.

  • These are my favourite toppings, but go with whatever you like. Chopped olives, fresh coriander (cilandro), french fries and chunks of avocado all make great additions.
  • For the flatbreads, I’ve used Sainsburys Greek style flatbreads. Lebanase or Persian flatbreads, or even wheat tortillas or pitas also work well. If you want to make your own, I’ve got a great flatbread recipe!

Marinade the chicken for an hour and make up the salad. Cook the chicken on a griddle (or a frying pan) or in the airfryer. Pile into warm flatbreads with the salad, a drizzle of tzatziki and some crumbled feta.

Recipe Tips

  • Don’t be alarmed if the meat looks paler after it’s been marinating for a while.  The acid in the lemon juice starts to tenderise and ‘cook’ the meat.  Because chicken thigh is quite soft and tender already, I’d recommend marinating it no longer than a few hours.
  • For the best char, cook the chicken on a griddle plate or on the BBQ. You can also cook the chicken in the air fryer (see recipe card), in a frying pan/skillet or under the grill (broiler).

Make ahead Guide

Cook chicken ahead:

  • You can make this chicken ahead, although I think it tastes best when freshly cooked. If the chicken is cooked and then reheated, it tends to be a little bit dryer.
    • If you do make and cook the chicken ahead, then cool, cover and refrigerate for up to 2 days. Reheat in the air fryer or an oiled frying pan over a medium heat until piping hot. Then assemble with flatbreads and salad.

Marinade ahead:

  • You can of course marinate the chicken ahead – then cover and refrigerate it.
  • Marinate the chicken for up 2 hours ahead

OR

  • Leave out the lemon zest, juice and salt and you can marinate the night before. Stir the lemon zest, juice and salt in about 10 minutes before you cook it.

Leftovers:

  • LeftoversThis chicken tastes great, served cold the next day as part of a salad or wrap.Simply cool the cooked chicken quickly, then cover and refrigerate until the next day.

Chicken Souvlaki Recipe

Chicken souvlaki wraps with juicy marinated chicken, crunchy salad and feta. Serve with my homemade tzatziki for a fresh Greek-style dinner.

Ingredients

Chicken and marinade:

  • 500 g (17 1/2 oz) chicken thigh fillets about 6 fillets, chopped into cubes
  • 2 tbsp olive oil
  • 2 garlic cloves peeled and crushed
  • zest and juice of 1 medium lemon (approx. 2tbsp of lemon juice)
  • ½ tsp salt
  • ½ tsp dried dill or 1/2 tbsp fresh dill, chopped

Salad:

  • ½ a large cucumber chopped into small chunks
  • 100 g (3 1/3 cups) Cos or Romaine lettuce shredded
  • 2 large tomatoes chopped into small chunks
  • ¼ red onion peeled, and cut into slices

To Serve:

Instructions 

  • Add the chicken and marinade ingredients to a bowl, give it stir, then cover and place in the fridge to marinade for an hour or two.
    500 g (17 1/2 oz) chicken thigh fillets, 2 tbsp olive oil, 2 garlic cloves, zest and juice of 1 medium lemon, 1/2 tsp salt, 1/2 tsp dried dill
  • Add the salad ingredients to a bowl and toss everything together.
    1/2 a large cucumber, 100 g (3 1/3 cups) Cos or Romaine lettuce, 2 large tomatoes, 1/4 red onion

Griddle/Frying pan option for cooking chicken:

  • When you're ready to cook your chicken, heat up a griddle pan until very hot, take your chicken out of the fridge, remove from the bag and place the chicken in a single layer on the griddle. It should start to sizzle.
  • Leave to cook for a couple of minutes until browned, then using some tongs, turn over. Continue to cook until the chicken is cooked all the way through. You can test this by slicing one of the larger pieces of chicken in half, and ensuring it's hot and no longer pink in the middle.
  • Squeeze on the juice of half a lemon for extra zing (optional).

Air Fryer option for cooking chicken:

  • Spray/brush your air fryer basket with oil. Add the chicken, and spray/brush on more oil. Air fry on the air fryer setting at 200C/400F for 15-18 minutes, tossing once, halfway through cooking. You can test this by slicing one of the larger pieces of chicken in half, and ensuring it's hot and no longer pink in the middle.
  • Squeeze on the juice of half a lemon for extra zing (optional)

Serving:

  • Place the flatbreads onto four plates, and distribute the chicken between each wrap. Add a little of the salad, a good spoon full of the tzatziki, and a sprinkle on the feta cheese. Then roll up the wraps. Serve with the remaining salad and Tzatziki.

    I would say souvlaki is one of the most popular Greek dishes. And it’s not hard to make at home! Make some extras and you have meals for a few days.
