My serving suggestions include serving it with potatoes, rice or pasta, but I’ve got to admit, sometimes I don’t even bother with cooking a side dish and serve this lemon feta fish with a big wedge of crusty bread for dipping in the sauce instead.

📋 Ingredients

Fish – I like to use fresh basa fillets, which you can get from most supermarkets. However, you can sub it with any quick-cook thin fillets of fish, such as sole, sea bream or sea bass (see faqs below the recipe card for chunkier fish subs).

Cherry Tomatoes – I use cherry tomatoes (grape tomatoes). Use regular red cherry tomatoes, or give the dish more colour with a mix of red and yellow cherry tomatoes.

Seasonings – We’re using a blend of salt, pepper, garlic granules, chilli flakes, paprika, and dried oregano.

Pro Tip

You can replace the basa with other quick-cook thin fillets of fish, such as sole, sea bream or sea bass.

Lemon Feta Fish Recipe

Ingredients

Fish

  • 4 boneless basa fillets (about 500g/1.1lb) (sub with any quick-cook thin fillets of fish – such as sole, sea bream or sea bass)
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon chilli flakes
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

Also

  • 200 g (7 oz) cherry tomatoes (grape tomatoes) sliced in half (multicoloured tomatoes add a nice splash of colour)
  • 1 tablespoon cornflour (cornstarch in USA)
  • 2 cloves garlic peeled and minced
  • 120 ml (1/2 cup) chicken stock
  • 3 tablespoons finely chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 lemon thinly sliced
  • 2 tablespoons capers drained
  • 200 g (7oz) feta cheese crumbled

To serve

  • Freshly chopped parsley
  • Black pepper
  • Potatoes rice or pasta

Instructions 

  • Preheat the oven to 200C/400F (fan)
  • To a large baking dish, add the sliced cherry tomatoes. Sprinkle on the cornflour and toss together to coat the tomatoes.
    200 g (7 oz) cherry tomatoes (grape tomatoes), 1 tablespoon cornflour
  • Add the garlic, stock, parsley, and olive oil and toss everything together.
    2 cloves garlic, 120 ml (1/2 cup) chicken stock, 3 tablespoons finely chopped fresh parsley, 2 tablespoons olive oil
  • Add the sliced lemon, capers and feta to the dish and place the basa fillets on top.
    4 boneless basa fillets (about 500g/1.1lb), 1 lemon, 2 tablespoons capers, 200 g (7oz) feta cheese
  • Mix together the paprika, oregano, chilli flakes, garlic powder, salt and pepper and sprinkle on the basa fillets.
    1 teaspoon paprika, 1 teaspoon dried oregano, ½ teaspoon chilli flakes, ½ teaspoon garlic powder, ½ teaspoon salt, ½ teaspoon black pepper
  • Drizzle the fish with the olive oil, then place in the oven for 15-20 minutes, until the fish is cooked through, and the tomatoes are tender.
    1 tablespoon olive oil
  • Serve with potatoes, rice, or pasta, topped with fresh parsley and black pepper.

? Frequently Asked Questions

Can I prepare it ahead?

Yes you can prepare this recipe ahead. Prep the recipe right up to just before you add the oil. The cover and refrigerate (up to a day). Remove from the refrigerator 1 hour before cooking to take the chill off. Drizzle on the oil and cook as per the rest of the instructions.

Where can I find basa fillets?

I’ve found them in Sainsbury’s, Morrisons, Tesco and Aldi.

Can I use frozen fish?

Yes, but you will need to add more cooking time. Be sure to use quick-cook thin fillets of fish – such as basa, sole, sea bream or sea bass. Add an extra 5-10 minutes to the cooking time and check the fish is piping hot throughout and flaky so you know it’s done.
Alternatively you can buy frozen basa fillets and defrost before using.

Can I use a chunkier fish such as salmon or haddock?

Yes, but you will need to add a little more cooking time. This could be 1 -5 minutes, depending on the type of fish and thickness. Add an extra minute initially to the cooking time, then check the fish. It should be piping hot throughout and flaky so you know it’s done. Cook for longer until you reach this point.
