Today’s flavour combination was invented by my 4 year old son – Lewis. He’s a big peanut butter fan. When I presented him with peanut butter on toast and a bowl of sliced fruit a couple of weeks ago, he proceeded to make his own toasted sandwich, and was very proud of himself 🙂
Personally I’m not such a big peanut butter fan. In fact I can’t stand the stuff in it’s normal form. Using it for cookies or satay or peanut chicken – well that’s a completely different story. On toast though? no thanks. Of course, I did show willing for my little boy’s sake, and took a bite, declaring it a masterpiece. The cherry and banana did go together very well, and really helped to lighten the whole thing. It’s actually got me thinking about making my own nut butter for another toastie later this week……
Cherry, Banana and Peanut Butter Toastie (Serves 1)
Ingredients:
- 2 slices of thick cut bread
- 2 tbsp peanut butter
- 1 ripe banana, cut into slices
- 5 or 6 fresh ripe cherries, de-stoned and cut into slices
Method:
- Toast your bread until nicely browned. Slice each piece in half, then spread two of the halves with the peanut butter. Place the banana slices on top, followed by the cherry slices. Place the remaining half slices of toast on top, squash every thing down a bit so the peanut butter squidges out (be careful, the banana slices have a tendency to fly out at this point) and enjoy!

Oh my gosh, this looks so delish!! I love peanut butter and banana….and who would have ever thought to add cherries? I LOVE cherries! I am totally making this. LOVE. <3
I have to give my 4 year old the credit for the cherry addition 🙂 He’s a recipe developer in the making! He was making bread with me and his sister yesterday, and he decided it needed to be swirled with almond butter and chocolate chips. Way better than my bread!!
