When the evenings are lighter but the weeknights are still wildly busy, these 11 quick spring dinners are exactly the kind of recipes I lean on. Fresh, colourful, full of flavour, and ready in around 30 minutes.

Nicky’s Notes

A woman with long brown hair and a black top smiles at the camera, sitting indoors with a brick wall and some greenery in the background.

Spring dinners in our house need to tick a few very important boxes: quick enough for a weeknight, fresh enough to feel like we’re moving out of cosy winter food, and satisfying enough that nobody is rummaging through the cupboards an hour later.

These recipes are all ones I’d happily make on those in-between spring evenings – when you want something lighter and brighter, but still properly filling. The tarragon chicken feels a little bit special without being fussy, the honey garlic prawn rice bowls are brilliant when you want big flavour fast, and the air fryer salmon bowls with avocado orange salsa bring that lovely fresh zing that makes dinner feel instantly more sunny.

Honey Garlic Prawn Rice Bowls Recipe

Make sure you get everything ready before you start cooking the prawns in this recipe, as they’re done in 5 minutes!I like to keep this bowl recipe nice and simple – using microwave rice for the base and a mixture of raw chopped vegetables on top. Drizzle the sauce from the pan over the top for the perfect dressing!

Chicken ‘Stir Fry’ Traybake (Dump-and-Go!)

This is a simple hands-off method of getting a dinner on the table quickly. Everything is added to the tray at the start, then it all cooks together in the oven. The addition of the cornflour helps the sauce to thicken as it cooks.

Creamy Lemon Ravioli Recipe

This is one of my favourite ways to seriously up the game on ready-made ravioli. There’s no need to boil the ravioli separately, as it cooks in the sauce, so it makes a really quick meal, that only uses one pan.

Why These Speedy Spring Recipes Work

  • They’re genuinely quick to make – every recipe is designed for busy evenings when you want something fresh and satisfying without spending ages in the kitchen.
  • They use bright, seasonal flavours – lemon, herbs, peas, avocado, orange and lighter sauces help make these dinners feel fresh and spring-like.
  • We’ve a good mix of proteins – chicken, salmon, prawns, beef and ham keep the meals varied, so the week doesn’t feel like the same dinner on repeat.
  • They keep washing-up manageable – one-pot dinners, traybakes, air fryer recipes and sheet pan meals mean less faff and fewer pans to tackle afterwards.
