Strips of steak piled on top of lovely fat chips and smothered in peppercorn sauce. A special treat family dinner that’s requested again and again.

There’s a café on the beach near where we live that sells the most amazing steaky chips. They’re so good I had to figure out how to make them at home when the café closed for the winter season!
I wanted to make this a quick recipe, so I use frozen chips to help keep it under 30 minutes.
You can make your own chips if you prefer and if you have a little more time to spare.
This recipe serves 4, but I also like to halve the recipe to serve two, for date night. I may have brazenly used it a couple of times to get my own way. It works 😁

Best steak for Steak and Chips
I recommend good quality thick (2-2.5cm cm thick) ribeye or sirloin steak with some fat running through it. They’re not cheap cuts, but you can stretch 2 steaks to feed four people.
- Ribeye tends to have a chunk of fat in the middle and some smaller veins of fat (see image above).
- Sirloin just tends to just have the smaller veins of fat.

Cook the chips in the oven. Meanwhile oil and season the steaks and fry (6 mins, turning every min). Transfer to a plate and add butter to the pan. Add shallots, peppercorns and salt, then worcestershire sauce and stock. Simmer, then add cream. Slice the steak and place on top of chips, then pour on the sauce.
Recipe Tips
- Remove the steaks from the fridge 30 minutes before cooking – this is to take the chill off, so the steaks cook more evenly.
- This also works well as a centrepiece, served in one huge portion, on a tray, in the middle of the table. I like to serve it like this, alongside a big salad, so everyone can tuck in and add to their own plates with a set of tongs.

Steaky Chips with Peppercorn Sauce Recipe
Ingredients
- 1 kg (2lb 4oz) frozen oven chips
- 2 x 300g (2x 10.5oz) rib-eye steaks (removed from the refrigerator 30 minutes before cooking)
- 2 tablespoons oil
- ½ teaspoon salt
- ½ teaspoon ground black pepper
Peppercorn sauce
- 1 tablespoon unsalted butter
- 2 shallots peeled and finely chopped
- 4 teaspoons black peppercorns lightly crushed
- ¼ teaspoon salt
- 180 ml (¾ cup) beef stock
- 1 teaspoon Worcestershire sauce
- 120 ml (½ cup) double (heavy) cream
To Serve
- chopped fresh flat-leaf parsley
Instructions
- Start with the chips. Preheat the oven to 200–220°C fan/425–475°F. Place the chips in a single layer on a large baking tray and cook as per the packet instructions (usually about 20–25 minutes).1 kg (2lb 4oz) frozen oven chips
- When the chips have about 15 minutes left to cook, make the steak and peppercorn sauce. Heat a large frying pan (skillet) over a high heat.
- Rub the oil into the steaks using your hands, then sprinkle the salt and pepper on both sides. Place the steaks in the pan and cook for 6 minutes, turning every minute. Remove from the pan and place, covered, on a plate to rest.2 x 300g (2x 10.5oz) rib-eye steaks, 2 tablespoons oil, ½ teaspoon salt, ½ teaspoon ground black pepper
- Add the butter to the pan you cooked the steaks in and reduce the heat to medium. When the butter has melted, add the shallots, peppercorns and salt and cook for 2–3 minutes until the shallots start to soften.1 tablespoon unsalted butter, 2 shallots, 4 teaspoons black peppercorns, ¼ teaspoon salt
- Add the stock and Worcestershire sauce and bring to the boil. Simmer rapidly for 5 minutes until reduced by half.180 ml (¾ cup) beef stock, 1 teaspoon Worcestershire sauce
- Pour in the cream and any resting juices from the steak and stir together.120 ml (½ cup) double (heavy) cream
- Cut the steak into thin slices. Add to the sauce, stir together and turn off the heat.
- Divide the chips between plates or bowls. Top with the steak strips and peppercorn sauce and serve sprinkled with fresh parsley.chopped fresh flat-leaf parsley
