Perfect for when you need a quick cheesy-carb fix, these pizza toasts are simple and easy to get on the table (we’re talking 10 minutes!).

Why I think you’ll love them too

  • It uses ingredients you probably already have in!
  • You don’t have to be too precise. Haven’t got pepperoni in or a couple of types of cheese in? Use pieces of ham or chicken and stick to one type of cheese.
  • They’re completely customisable – you can make each slice different to suit everyone’s tastes.
  • Perfect for getting the kids involved in the kitchen (or making it themselves if they’re a little older). Get them to make you one while they’re at it.
  • And yes, I’m bring up how quick they are to make again. If we’ve got 20 minutes at home to make and consume dinner before rushing out, i’m 100% serving up these pizza toasts with a packet of crisps and a piece of fruit.

Pro Tip

Swap out the toppings to change up the pizza toasts. Sliced mushrooms, jalapeños, pineapple chunks, shredded ham and diced peppers all work well. You can also add a spoonful of pesto to the pizza sauce for extra flavour.

Ingredients

Pizza Toasts:

  • 4 thick slices of bread I like to use sourdough or tiger bread for a crispier crust
  • 1 tablespoon tomato puree paste
  • 3 tablespoons tomato ketchup
  • 1 teaspoon olive oil
  • ½ teaspoon dried oregano
  • ¼ teaspoon garlic powder
  • 150 g (1 ½ packed cups) grated mixed cheese (I use a mixture of cheddar, mozzarella and red Leicester)
  • 4 cherry tomatoes sliced
  • 6 slices pepperoni quartered

To Serve:

  • ¼ teaspoon dried oregano
  • 2 spring onions (scallions) sliced

Instructions 

  • Lightly toast the bread on both sides under the grill (broiler).
    4 thick slices of bread
  • Mix together the tomato puree, tomato ketchup, olive oil, oregano and garlic powder in a small bowl.
    1 tablespoon tomato puree, 3 tablespoons tomato ketchup, 1 teaspoon olive oil, ½ teaspoon dried oregano, ¼ teaspoon garlic powder
  • Top the toast slices with the sauce and spread to the edges.
  • Sprinkle on the grated cheese, then arrange the tomato slices and pepperoni pieces on top.
    150 g (1 ½ packed cups) grated mixed cheese, 4 cherry tomatoes, 6 slices pepperoni
  • Place back under the grill (broiler) on a high heat, until the cheese is melted and bubbling (about 3-5 minutes).
  • Serve topped with a sprinkling of dried oregano and spring onions.
    ¼ teaspoon dried oregano, 2 spring onions (scallions)
