I’m getting in there early with a pomegranate-rum cocktail I’ve been ‘testing’.

It started off with more rum and less pomegranate juice, but I soon realised it was perhaps a little too strong (like 5 sips and I was giggling strong).

Although I’m giggling now whilst looking at this pic. Is it just me, or can you see a face on this glass?
One blueberry for an eye (Chris says it’s winking at me, which is why there’s only one eye!), and a big smile – I think this is the line of my wooden board distorted to look curved in the glass.

I’m not a great drinker anyway. Back in my uni days, I could keep up with most of my buddies, but nowadays I can feel it when I’ve had one glass of wine!

I’m much better drinking cocktails or spirits & mixers than wine or beer, so a fruity cocktail is definitely on the cards for me this New Year’s Eve.

Along with the TV and mini-buffet-for-two that Chris and I will enjoy once the kids are in bed.

Yeah, we’re boring grown ups who don’t party on New Year’s Eve. I can’t be bothered with the crowds and queues, the hassle of finding a baby sitter, and the hour-long wait in the freezing cold for a taxi that costs the same amount as a family holiday.

Ha ha how grumpy do I sound! Maybe I need another few sips.

I love the bitter-sweetness of the pomegranate juice in this cocktail. Be sure to buy 100% pomegranate juice for a stronger flavour and colour.

I also like to use frozen berries. They make a pretty alternative to ice cubes (you can add ice cubes too if you like), and they don’t dilute the drink like ice cubes do. Plus you get to eat them at the end 🙂

New Year's Eve Rum Berry Cocktail

New Year's Eve Rum Berry Cocktail! With rum, Cointreau, pomegranate juice and ginger beer! Use frozen berries instead of ice cubes to finish the look!

Ingredients

  • 90 ml (1/3 cup + 1 tbsp) spiced rum (I use Kraken spiced rum)
  • 510 ml (2 cups + 2 tbsp) pomegranate juice 100% juice, not the diluted kind
  • 30 ml (2 tbsp) Cointreau
  • 240 ml (1 cup) spiced ginger beer
  • 250 g (2 cups minus 3 tbsp) frozen mixed berries
  • Ice optional
  • 90 g (3/4 cup) fresh raspberries
  • A few sprigs of fresh thyme

Instructions 

  • Pour the rum, pomegranate juice, Cointreau and ginger beer into a large jug. Stir to mix.
    90 ml (1/3 cup + 1 tbsp) spiced rum, 510 ml (2 cups + 2 tbsp) pomegranate juice, 30 ml (2 tbsp) Cointreau, 240 ml (1 cup) spiced ginger beer
  • Half fill 4-6 glasses with frozen berries (add a little ice to if you want to).
    250 g (2 cups minus 3 tbsp) frozen mixed berries, Ice
  • Fill the glasses with the cocktail, then top with a few fresh raspberries and a sprig of fresh thyme before serving.
    90 g (3/4 cup) fresh raspberries, A few sprigs of fresh thyme

    This looks DELICIOUS, and I want to do it justice…but what is “spiced ginger beer”? I have never even used regular ginger beer, let alone the spiced version. Can you provide the brand you used? ☺️

      Hi Karen, London Essence and Bundeberg do a nice spiced ginger beer. Any that are described as ‘fiery’ will be great too. Old Jamaica, Heron valley, The Artisan drinks company, Belvoir all do one. It’s just ginger beer that’s got a bit more of a spicy kick to it. Hope you enjoy it 🙂

    Ooh Nicky this looks so festive. I’m going to have to swap out the Cointreau (allergic to orange!!) and maybe using limoncello? What do you think? I can also see the face in your glass and I haven’t touched a drop……

      Hi Sammie, Yes, I think limoncello would work well in this. Maybe add half the amount of limoncello first and try it before adding the rest. If all else fails, I’d just go with more spiced rum 😀
