Instructions
In a bowl, mix together the flour, baking powder and salt. Add the melted butter, egg, and milk and whisk together using a hand whisk until thick and lump-free.
80 g (2/3 cup) plain (all-purpose) flour, 1 ¼ tsp baking powder, ¼ tsp salt, 20 g (2 tbsp) unsalted butter, 1 large egg, 120 ml (1/2 cup) milk
Heat a non-stick frying pan (skillet) over a medium heat, and drop teaspoon-size blobs into the pan - leaving a little room as they will spread slightly.
Cook for 1-2 minutes each side until lightly browned. You will probably need to do 3-4 batches, as this recipe will make 40-50 blinis.
Once cooked, place 2 blinis on a plate. Top each with 1/2 tsp of marshmallow fluff. Add a few chunks of strawberry to one, and a few chunks of kiwi to the other. Drizzle a little (1/4 tsp) melted dark chocolate onto the strawberry blini and a little melted white chocolate onto the kiwi blini. Top each with another blini, then add another layer of fruit, another drizzle of melted chocolate, and finish with a pinch of biscuit crumbs.
5 tbsp marshmallow fluff, 10 strawberries, 1 large or 2 small kiwi fruit, 50 g (1.75 oz) white chocolate, 50 g (1.75 oz) dark chocolate, 2 digestive biscuits
Repeat with the remaining blinis until you have 20-25 blini stacks. Serve immediately if you like the chocolate melted, or cover and serve within an hour or two if you're okay with the chocolate firming up.
Notes
Blinis can be served cold, but if you want to reheat, then wrap in a little foil in a single layer, and place in a hot oven for 5 minutes..Nutritional Information is per serving.
