Make sure you get everything ready before you start cooking the prawns in this recipe, as they’re done in 5 minutes!I like to keep this bowl recipe nice and simple – using microwave rice for the base and a mixture of raw chopped vegetables on top. Drizzle the sauce from the pan over the top for the perfect dressing!
500gmicrowave basmati or long grain rice(2x 250g packs or 1.1 lb altogether)
½cucumberthinly sliced
1avocadode-stoned and chopped into chunks
½small red onionpeeled and finely diced
1tablespoonmixed black and white sesame seeds
3tablespoonschopped fresh coriandercilantro
Instructions
Heat the microwave rice through, as per the pack instructions. Once cooked, it can be left in the packs for a few minutes, while you cook the prawns.
500 g microwave basmati or long grain rice
Now make the prawns. Heat the oil and butter in a frying pan (skillet) over a high heat until the butter starts to bubble.
1 teaspoon oil, 1 teaspoon unsalted butter
Season the king prawns with the salt, pepper and paprika, then add to the pan and fry, turning often with a spatula for 1-2 minutes, until the prawns start to turn pink.
300 g (10.5oz) pack raw king prawns, ¼ teaspoon salt, ¼ teaspoon black pepper, ½ teaspoon paprika
Turn the heat down to medium and add the garlic. Stir together for a further minute, then add the soy sauce and honey.
Stir together for a further minute, then turn off the heat.
Divide the rice between bowls. Arrange the honey garlic prawns on top, along with the cucumber, avocado and red onion.

Drizzle any sauce left in the pan over prawns and rice.
Sprinkle on the sesame seeds and fresh coriander and serve.

This recipe serves 4 but can easily be scaled to serve 2 by halving the ingredients.Tip: Swap out the plain microwave rice for a flavoured rice. Lime and coriander or roasted garlic flavours are firm favourites in our house.
