200g(2 cups) leekthinly sliced - 13.6g carbs (internet resources show very different carb counts for leeks. However, I took my carb count directly from the Atkins phase 1 page).
100g(1 1/3 cup) mushroomsthinly sliced 3.6g carbs

60g(1/2 cup minus 1 tsp) cheddar grated 0.8g carbs

Instructions
Heat the oil in a medium frying pan and add in the leeks and mushrooms. Fry on a medium heat for 5 minutes until the leek has wilted and the mushrooms have softened.
1 tbsp olive oil, 200 g (2 cups) leek, 100 g (1 1/3 cup) mushrooms
Add in the garlic and cream and stir. Cook for 1 minute. Add in half the cheese and stir.
1 clove garlic, 2 tbsp double cream, 60 g (1/2 cup minus 1 tsp) cheddar grated
Transfer the gratin to a heat-proof dish and sprinkle with the remaining cheese and the black pepper. Grill until the cheese melts and starts to go golden.
