Cook the oven chips as per the instructions and when they are 5 minutes from the end make the topping.
700 g (1.5 lbs) oven chips (fries)
Heat the oil in a frying pan over a medium-high heat.
1 tbsp sunflower oil
Add the chopped onion, the chopped red and green chillies, salt, black pepper, and Chinese five spice to the pan.
1 onion, 2 red chilli, 2 green chilli, 1/2 tsp salt, 1/2 tsp black pepper, 1 ½ tsp Chinese five spice
Fry for about 2-3 minutes, stirring often, until the onion starts to soften slightly.
Then turn down the heat to medium and add in the minced garlic and spring onions.
2 garlic cloves, 3 spring onions/scallions
Fry for a further minute, stirring often.
By now the chips should be ready. Add the chips to the frying pan with onion and chillies in and toss everything together for 1 minute.
Transfer to a serving dish and serve.

Notes
Oven Chips:I really like these with skin-on oven chips, but you can use your favourite chips or fries. Skinny ones, steak chips or crinkle cut - they all work great!Best Potatoes if you're making homemade chips:I use Maris Pipers - which are a floury potato. This ensures the potatoes have a lovely fluffy interior. King Edward, Rooster and Russet also work great. Can I make it ahead? No, I don't recommend making this dish ahead of time. It's best served fresh for maximum flavour and to ensure the chips are crispy.Ingredient swaps
If you don't like chillies but still want to make this recipe, swap out the chillies for half of a finely chopped bell pepper.
Try this recipe with sweet potato fries or carrot fries.
Add in shredded cooked chicken for a meaty addition.
Just cooking for one or two?You can halve or even quarter this recipe to serve one or two people. Stick to the same ingredient ratios (except the oil - you may need to add in a little more oil when cooking the onion) and the same cooking time.Nutritional information is per serving of this recipe.
