75g(3/4 cup) grated/shredded cheddar cheese
100g(1 cup) grated/shredded mozzarella cheese

small bunch fresh parsleyfinely chopped
Instructions
Place the chips on a large oven tray, in a single layer, and cook as per the instructions on the pack.
900 g (2 lbs) oven chips
Meanwhile, in a bowl, mix the passata, tomato puree, all but a pinch of the oregano, thyme, garlic powder, and onion powder.
120 ml (1/2 cup) passata, 2 tbsp tomato puree, 1 tsp dried oregano, ½ tsp dried thyme, ½ tsp garlic powder, ½ tsp onion powder
When the chips are cooked, we want to pile them up (rather than have them in one single layer), so either pile them in the centre of the tray or pile them up on a smaller tray. I like to use a smaller tray, and then serve the pizza fries directly from it.
Drizzle the sauce over the top of the chips and sprinkle on half of the cheddar and half of the mozzarella.
75 g (3/4 cup) grated/shredded cheddar cheese, 100 g (1 cup) grated/shredded mozzarella cheese
Top with the sliced red pepper, then sprinkle on the remaining cheddar and mozzarella.
1 red bell pepper
Sprinkle on the reserved pinch of oregano, then top with the pepperoni slices.
15 slices pepperoni
Place back in the oven to cook for 8-10 minutes, until the cheese has melted and the pepperoni is cooked through.
Remove from the oven and sprinkle on the chopped parsley before serving.

Notes
Can I make Pizza Fries ahead? These fries are best eaten straight away, so I wouldn't recommend making them ahead of time.Best type of potatoes to use if you're making homemade chips:I like to use Rooster potatoes - which are red-skinned floury potatoes. Any floury potato - such as Russet, Desiree, Maris Piper or Kind Edward will also work great.Best type of pepperoni to use:I like to use a 4-5cm diameter, thinly sliced Italian pepperoni or salami. Ideally one that is pre-sliced, so the slices are consistent.I like a hot and spicy pepperoni, but you can use a milder one if you prefer.Make it even simpler:
Use ready-made pizza sauce, instead of making your own
