Peach and Pineapple Salsa
Peach and Pineapple Salsa with a Jalapeño kick.

- 1 ripe peach diced
- ¼ of a small pineapple skin removed, chopped into small chunks
- 1 jalapeno sliced finely
- 10 vine-ripened cherry tomatoes cut into quarters
- Small bunch coriander cilantro, roughly torn
- Juice of 1 lime
- ½ tsp. salt
You can make the salsa a couple of hours in advance, just mix everything together – except the coriander – then cover and refrigerate. Mix the coriander in just before serving.
