It’s got fruit in it, so I’m giving it a 5 out of 10 for healthy.

Sometimes I just like to serve my fruit with marshmallow fluff, mini pancakes (that’s what Lewis calls blinis) and chocolate.

A cute little bite sized party food for Christmas or New Year, you can make the blinis ahead, and assemble them before serving.

You can actually make the whole thing ahead of time if you like, but the chocolate will set – and I like my chocolate warm and melty!!

We’re having Christmas dinner at ours this year – thirteen of us, testing out our new kitchen to capacity. I’m thinking these fruity blinis will make a good little snack that the kids will LOVE (as well as the grown ups), whilst I’m trying to juggle turkeys and roast potatoes!

I’ve already cooked two turkeys for freelance videos so far. Hopefully by cooking them in November, I won’t be sick of Turkey come Christmas day!!

We’ll do canapes instead of a starter – much less pressure having them prepared in advance, and means I can still concentrate on cooking the dinner whilst people are nibbling. Then we’ll have turkey with all the trimmings and probably a couple of desserts.

I might leave dessert up to Chris though. He did chocolate-orange 3 ways a few years ago and it was a total hit!

Fruity S'mores Marshmallow Blinis - A simple and sweet appetizer! Make the blinis ahead and assemble just before serving!

Ingredients

Blinis:

  • 80 g (2/3 cup) plain (all-purpose) flour
  • 1 ¼ tsp baking powder
  • ¼ tsp salt
  • 20 g (2 tbsp) unsalted butter melted
  • 1 large egg
  • 120 ml (1/2 cup) milk

Filling:

  • 5 tbsp marshmallow fluff
  • 10 strawberries chopped into very small pieces
  • 1 large or 2 small kiwi fruit peeled and chopped into very small chunks
  • 50 g (1.75 oz) white chocolate melted
  • 50 g (1.75 oz) dark chocolate melted
  • 2 digestive biscuits of Graham crackers, crumbled

Instructions 

  • In a bowl, mix together the flour, baking powder and salt. Add the melted butter, egg, and milk and whisk together using a hand whisk until thick and lump-free.

  • Heat a non-stick frying pan (skillet) over a medium heat, and drop teaspoon-size blobs into the pan - leaving a little room as they will spread slightly.
  • Cook for 1-2 minutes each side until lightly browned. You will probably need to do 3-4 batches, as this recipe will make 40-50 blinis.
  • Once cooked, place 2 blinis on a plate. Top each with 1/2 tsp of marshmallow fluff. Add a few chunks of strawberry to one, and a few chunks of kiwi to the other. Drizzle a little (1/4 tsp) melted dark chocolate onto the strawberry blini and a little melted white chocolate onto the kiwi blini. Top each with another blini, then add another layer of fruit, another drizzle of melted chocolate, and finish with a pinch of biscuit crumbs.
    5 tbsp marshmallow fluff, 10 strawberries, 1 large or 2 small kiwi fruit, 50 g (1.75 oz) white chocolate, 50 g (1.75 oz) dark chocolate, 2 digestive biscuits
  • Repeat with the remaining blinis until you have 20-25 blini stacks. Serve immediately if you like the chocolate melted, or cover and serve within an hour or two if you're okay with the chocolate firming up.

Notes

Blinis can be served cold, but if you want to reheat, then wrap in a little foil in a single layer, and place in a hot oven for 5 minutes.
